Whole Wheat Pita Chips

8” whole whet pita bread, quartered 1 Tbsp Extra Virgin Olive Oil or Olive Oil Spray
Freshly ground pepper 1/8 tsp kosher or coarse sea salt, optional

1. Preheat oven to 375 degrees.
2. Separate pita wedges into 2 pieces. Arrange these wedges in 1 layer on a baking sheet.
3. Coat pita generously with oil or cooking spray. Then sprinkle with salt.*
4. Bake 6-9 minutes, until chips curl up at the edges, and slightly darker at the edges. Cool on the baking sheet. They crisp as they cool.

Make ahead- Keep in a foil-covered plate up to 8 hours.

Variation – Can be made with roasted garlic spread on the chips with the back of a spoon prior to baking.

Or – shake on spice mix below instead of salt
2tsp Ground Cumin
1 tsp ground coriander
½ tsp cayenne pepper
1 tsp garlic powder
½ tsp freshly ground black pepper
½ tsp salt

For other uses, you can sprinkle Parmesan cheese or dill.
