Tomatoes – Fruit or vegetable?  Either way they are fabulous!  They can be red, yellow, orange, green or even brown.  There are over a thousand different varieties.  The tomato is a low calorie food packed with nutrition, especially when fully ripe.  Tomatoes are an excellent source of vitamin C, carotenes, biotin, and vitamin K.  They are also a good source of vitamin B6, pantothenic acid, niacin, folic acid and dietary fiber.

 

How to buy/store:  Good-quality tomatoes are well formed and plump, fully colored, firm, and free from bruise marks.  Store tomatoes at room temperature and out of direct exposure to sunlight.  They will keep for up to a week.  If the tomatoes begin to become overripe, they can be placed in the refrigerator.

 

How to use:  Tomatoes can be enjoyed raw or cooked.  They add flavor and color to a variety of dishes.  Add them to salads, soups, sandwiches, rice dishes, mixed veggies.  They are fabulous in a fresh salsa or brushetta.
