PINEAPPLE GRANITA
Refreshing and Easy
Ingredients:
1 Pineapple, without skin, cut into chunks
1 cup water
1Tablespoon Local Honey
Put all in the blender and puree until smooth. Then pour into a glass or metal baking pan (with sides). Cover with plastic or waxed paper and place in freezer. At ½ hour intervals, stir the mixture with a fork. The water tends to separate. Depending on your pan and the temperature of the freezer, this takes a few hours.
When ready, scoop into pretty cups, top with a sprig of mint if you want to be fancy, and serve.
Idea – If you can find sno-cone cups this is a fun way to serve.
