Mango & Pineapple Salsa

  ½ fresh pineapple, peeled, and diced into ¼-inch pieces
   1 fresh mango, peeled, and diced into ¼ -inch pieces
1 jalapeno pepper, minced fine
  ½ large red onion, peeled, and diced into ¼-inch pieces
  1-2 TBSP fresh Lime Juice
  3 TBSP cilantro, chopped (may use parsley or mint)

Combine all ingredients and season to taste with salt. Cover and chill for at least one hour to combine flavors.

Serve over fish, chicken, pork, or tofu.

It brightens up a plain meal. Also tastes good on rice!
